How to properly preserve bulk olive oil?

Protect it from its four enemies: heat, light, oxygen and time. Store it at a cool and stable temperature, in darkness, in an inert container (food-grade stainless steel), and blanket with nitrogen for large volumes to drive out oxygen. The oil then stays stable for longer.

These four factors act together. Heat accelerates oxidation, light triggers it, oxygen fuels it, and time lets it set in. Neutralising each one means buying preservation time.

Temperature: cool and above all stable

Temperature is the first lever. Heat accelerates oxidation reactions and degrades the aromas. Aim for a cellar or cool room, around 14-18°C (indicative benchmark, to be adjusted ), away from heat sources (direct sun, machinery, pipes).

Two mistakes to avoid:

  • Extreme cold: below ~7-10°C, the oil sets and forms crystals. This is not a quality defect — it becomes clear again as it warms up — but avoid back-and-forth swings.
  • Sharp fluctuations: a temperature that oscillates tires the oil more than a slightly high but stable temperature. Stability takes precedence over the exact figure.

In a hot zone (Tunisia, the Gulf, Mediterranean summer), an air-conditioned or underground room makes a real difference to shelf life.

Light: total darkness

Light, particularly UV, triggers the photo-oxidation that destroys pigments and aromas. The rule is simple: bulk oil is stored in the dark.

  • Favour opaque tanks (stainless steel) rather than translucent ones.
  • Store in a room without windows or with blocked-out openings.
  • For exposed drums or IBCs, never leave them in the sun, even temporarily on a dock.

The container: why stainless steel

The ideal container is neutral, meaning it exchanges nothing with the oil and lets no air through. Food-grade stainless steel (304 or 316 stainless steel) is the reference for storing large volumes:

  • It is inert: no migration, no alteration of taste.
  • It is opaque: protection against light.
  • It is airtight and cleanable: hygiene and no air re-entry.

Each bulk format has its uses: the flexitank (~22,000 L) for mass transport, the IBC (1,000 L) for intermediate lots, drums (200/216 L) for small volumes. Nitrogen: driving oxygen out of large volumes

Oxygen is the fuel of oxidation. The more a tank empties, the more the headspace (the air space above the oil) grows, and the more the oil oxidises at the surface.

The professional counter is nitrogen blanketing: air is replaced by nitrogen (an inert gas) above the oil. Oxygen can no longer attack the surface.

In practice:

  • On a stainless steel tank, a nitrogen blanket is renewed at each drawing-off.
  • You can also fill to the maximum to reduce the headspace, and limit transfers that re-oxygenate the oil.
  • For small containers, reducing residual air and resealing airtight is often enough.

Blanketing is standard among serious exporters: it is what allows the oil to reach you as fresh as at pressing.

Box: the 3 angles of the same storage

  • Buyer/importer side: your responsibility begins at receipt. Plan for a cool, dark room and stainless steel tanks before the container arrives, not after. Good storage protects the investment.
  • Exporter side: the delivered quality also depends on upstream storage (stainless steel tanks, nitrogen, no break in the cold chain). A serious exporter documents its storage conditions.
  • Logistics/transport side: between the two, the transport link must not break the protection — no container exposed to the sun, no unnecessary transfers, lot traceability.

The mistake that destroys a good oil

Storing it "like any other liquid": a translucent drum, in a room that heats up in summer, half-empty for months. Within weeks, the peroxide value climbs, the fruitiness fades, and an extra virgin can slip out of its category.
