What is the peroxide value of olive oil?
The peroxide value quantifies the peroxides formed during the primary oxidation of fatty acids. When oil comes into contact with oxygen, its lipids degrade and produce these unstable compounds, precursors of rancidity. They are expressed in mEq O₂/kg (milliequivalents of active oxygen per kilogram of oil).
A low value means the oil has reacted little with oxygen: it is fresh and well protected from air, light and heat. A high value signals advanced oxidation, hence an oil that is ageing or has been poorly stored.
The peroxide value is not tasted directly
Unlike rancidity clearly perceived in the mouth (the sensory "rancid" defect), the peroxide value is a chemical parameter measured in the laboratory. It detects oxidation before it becomes perceptible to the palate. That is precisely its value: it warns early.
An oil can show a peroxide value still compliant but already rising. That is why it is always interpreted as a trend, lot after lot, and by cross-checking with the UV absorbances (K232, K270) which measure oxidation from another angle.
Peroxide value limits by category (IOC/EU)
Here are the maximum limits set by the trade standard of the International Olive Council (IOC/T.15/NC) and European Union regulation. Reference data, to be verified against the texts in force.

Key point: the peroxide limit (≤ 20) is identical for the three virgin oil categories. So it is not what distinguishes an extra virgin from a virgin — that is acidity, the sensory panel and the UV indices. Peroxide serves as a common safeguard on freshness.
The peroxide value is not enough to classify an oil
A frequent buying mistake: believing that a low peroxide guarantees an extra virgin. False. The official classification rests on several simultaneous criteria:
- Free acidity (≤ 0.8% for EVOO, ≤ 2.0% for virgin).
- Peroxide value (≤ 20 mEq O₂/kg) — primary oxidation.
- UV absorbances: K232 (≤ 2.50), K270 (≤ 0.22), ΔK (≤ 0.01).
- IOC sensory panel: median of defects (Md = 0) and of fruitiness (Mf > 0) for EVOO.

How to use the peroxide value when buying in bulk
- Demand the COA per lot. The peroxide value must come from an IOC-accredited laboratory, never from a mere sales declaration. (See our quality process.)
- Aim low at the start. An oil at 5–10 mEq O₂/kg leaves a good safety margin; an oil at 18–19 is "borderline" and risks exceeding 20 during transport and storage.
- Read the peroxide alongside the UV indices. A low peroxide but a high K232 can betray oxidation that is settling: always cross-check the two.
- Follow the trend. A value that climbs from campaign to campaign or from lot to lot signals poor storage (heat, light, oxygen) or an ageing oil.
Tunisian oils of the Chemlali variety (South/Sfax) and Chetoui (North), cold-extracted and quickly after harvest, commonly show peroxide values well below 20. Chetoui, rich in polyphenols, also resists oxidation better over time.

What peroxide value for an extra virgin olive oil?
An extra virgin oil must have a peroxide value ≤ 20 mEq O₂/kg (IOC/EU standard). It is a maximum limit: fresh, well-preserved oils often show 5 to 12. The value alone is not enough, however, to classify an oil as EVOO.
