How to store bulk olive oil?
Short answer: olive oil is preserved by protecting it from its four enemies — light, air (oxygen), heat and time. In practice: an opaque and inert container, filled to the maximum to limit headspace, stored away from light, in a cool room at a stable temperature, with lot rotation driven by the best-before date. These conditions preserve acidity, peroxide value and polyphenols — hence the category and value of the lot.
Neglected oil oxidizes and turns rancid: its peroxide and UV absorbances climb, its polyphenols drop, and it can be downgraded from extra virgin to virgin, or even become unfit for consumer sale. These factors compound: oil exposed to light and heat and air degrades far faster than under a single factor. Conversely, combining the right conditions strongly slows aging.
Key point: oxidation is irreversible. You cannot "repair" oxidized oil; you can only prevent it. Hence the importance of controlled storage conditions from receipt onward.
Oxidation: what happens chemically
Oxidation is the main cause of olive oil degradation. It shows directly in the quality criteria (see the quality & standards guide):
- Peroxide value (primary oxidation): it rises — extra virgin threshold ≤ 20 mEq O₂/kg.
- UV absorbances (K232, K270): they rise with secondary oxidation.
- Polyphenols: they fall, because these antioxidants are consumed protecting the oil.
- Sensory: appearance of the rancid defect, which downgrades the oil at the panel.

The best-before date: shelf life
Direct answer: olive oil carries a best-before date (minimum durability date, "best before"), not a use-by date. After the best-before date, the oil is not dangerous but it may have lost quality (rancidity, loss of aromas). The declared duration depends on initial freshness and storage conditions; it is set by the producer and case by case.
- The best-before date counts from bottling / packaging, not from harvest.
