How to read this observatory

Three families of data coexist here, with different rhythms:

  • Prices move continuously. They are expressed in €/kg at origin (FOB), in bulk, extra virgin category, excluding freight, customs duties and VAT. Tracked **monthly **.
  • Production is measured by agricultural campaign (October → September). One campaign = one harvest. Tracked annually, revised when the IOC publishes its estimates.
  • Trade (exports/imports) is read in tonnes and market share (%) over a campaign or a calendar year. Consolidated figures arrive with several months' lag.

Each table carries its date and its status. No value is fabricated: in case of uncertainty, we give a wide range or refer to the source.

  • Production & trade — the International Olive Council (IOC) is the world reference for production and consumption; national customs and databases (such as Comtrade, Eurostat) for import/export flows. This data is revised regularly by the issuing bodies.
