The difference between extra virgin, virgin and lampante comes down to free acidity, the sensory panel (median of defects) and UV absorbances (K232, K270). An extra virgin has no defect and present fruitiness; a lampante is unfit for consumption as is and destined for refining.

Extra virgin olive oil (EVOO)
The flagship category: acidity ≤ 0.8%, cold extraction, no sensory defect. It is the most sought-after product for bottlers, private labels and brand creators. Our EVOOs come from the Chemlali variety (mild fruitiness) and Chetoui (robust, rich in polyphenols), single or blended. Virgin olive oil
Acidity ≤ 2.0%, fruitiness present but with slight sensory defects tolerated. It is an economical option for food service, blending and price-sensitive markets, without dropping to lampante. See virgin olive oil wholesale.
Organic olive oil
Extra virgin or virgin, but certified organic (EU 2018/848 / Ecocert, USDA NOP). The Tunisian terroir — arid climate, low pest pressure, extensive groves — is naturally suited to organic farming. A COA reports acidity, peroxide value, UV absorbances (K232, K270, ΔK), sometimes polyphenols and the sensory panel. Compare each value with the category threshold. Our COA quality classifier does it automatically.
